eat Thai Curry SoupWith the polar vortex in full force, there is nothing like coming home after a long day of work to a bowl of warm soup. My favorite soup of the moment is Thai Curry Soup. I was first exposed to this bowl of deliciousness when I was having lunch at Noodles and Company. While I’m not a fan of curry on its own, it tastes delicious in a coconut and chicken broth. Mix in a plethora of vegetables like mushrooms, tomatoes, and lettuce to name a few and you have a flavorful soup that you keep going back for more. A copycat recipe can be found here. Bon appettit!
