eat Sweet Corn PuddingContrary to the advertising departments of every major retailer, Thanksgiving is around the corner, not Christmas. Visions of pumpkin pie, not sugar plums have been dancing in my head and the visions have become more frequent and stronger as November 28th approaches. I already know that the traditional Thanksgiving side dishes like stuffing and mashed potatoes will make an appearance on the dinner table (because I will be making them), but this year, I’m thinking about adding an often neglected dish into the mix: corn pudding casserole. I’ve probably had this Southern comfort food staple a grand total of four times in my life, and with good reason: I know that one bite will become ten bites and the next thing you know, I’ll be laying on the kitchen floor with a spoon in one hand and and an empty 8×8 baking dish in the other. There’s a good chance that might happen this year when I make it, but I’m willing to take that risk.
