eat: Blood Orange, Avocado and Spinach Salad
With the sun coming out, I’m starting to think about all the fruit that will be season. I have an obsession with blood oranges and since I’ve been attempting to be healthy, they are a perfect addition to my diet. Avocados also have great health benefits, and one of my favorite vegetables is spinach, so when I came across this recipe that had those two ingredients and incorporated blood oranges, I knew it was something that I had to try. I’m not really a fan of walnuts, so I’ll be leaving them out in the final product, but the recipe can be found here along with a healthy vinaigrette that can be served with the salad. Bon appetit!
