Eat: French Onion Soup

With autumn fast approaching, my unofficial celebration of “soup season”. I love a bowl of soup when I’m feeling cold or actually have a cold. One of my favorite soups is French onion. The classic and simple soup is traditionally made with  beef stock base, slow-cooked caramelized onions, French bread,and melted  Gruyere cheese. I’m not even a big fan of onions, but I can gobble this soup down in a second. There are several variations of the soup; some people prefer to add wine or use a vegetable stock for a vegetarianism alternative, but I like the original recipe.
