Eat: Sweet Potato with Kale and Ricotta

It’s an amazing accomplishment when three seemingly random ingredients can come together and make something delicious (i.e. a reuben sandwich: Thousand Island dressing, sauerkraut, corned beef, and Swiss cheese – who thought of that?). The same effect is accomplished with this recipe from  the domestic goddess herself Martha Stewart. The combination of sweet potato, creamy ricotta, and salty kale that sprinkled with red pepper flakes and garlic give this dish a wide range of flavors and textures. A bonus is not only is this recipe delicious, but it’s a filling and healthy alternative to the traditional way sweet potatoes are prepared, meaning they are either drenched in maple syrup or cover in marshmallows.
